It depends on the shape you want. Some people grow figs as tall trees and others grow them as bushes. I have seen both mature into huge plants that produce a lot of great fruit.
If you're going for a tree, find the central shoot and trim all the lower stems to center the plants energy on what will become the main trunk.
If you're going for a bush, the idea is the same, but you're distributing the plant energy into a more radial configuration.
