Old Farmers Almanac
You need to prune only very young fig trees; established ones can be productive with or without heavy pruning. Avoid heavy winter pruning, which can cause the loss of the upcoming crop. It is best to prune immediately after harvesting the first crop of the season. If yours is a late-ripening variety, prune half the branches this summer and the remainder next summer.

I did not know this had to look it up....
When do you prune a fig tree?
If you need to prune a fig then it has to be done in the dead of winter, or the cut ends bleed latex sap. It's the same time with vines.
The sap of figs is also hazardous, it contains a histamine and you can get an allergic reaction if it gets in your eyes or on lips. If this happens seek medical advice or take a couple of antihistamine tablets
