How dooo they get the figs into fig rolls?

It is cooked like the filling for date squares and other fruit filled cookies and pastries, I like the greek fig cookies.



I use the string or dried figs, you just heat them after snipping off the stem ends in a light sugar syrup, I find they need just a bit of sugar and a squeeze of lemon to booast there flavour, then you make a basic sugar cookie dough and fill flatten rounds and make a turn over style cookie, for ones like Fig Newton you need a machine or a helper.
