I make all kinds of jams and preserves without gelatin. You need to up the sugar a bit and add a bit of lemon juice. Cook it longer until it starts to thicken to the point of being just a little too runny (It will thicken as it cools) and can it as you like.
Does anyone have a good recipe for fig perserves that does not use jello (i'm a vegetarian)?

I do it all the time with all knds of fruit (except for pineaple)and you don′t need to use jello.

3 cups figs, cut up
3 cups sugar
1/2 cup lemon juice
1 box strawberry or blackberry gelatin
Combine all ingredients in large saucepan and cook for 15 to 20 minutes. Pour into jelly glasses.
